Using bokashi composting to solve a food waste problem
About the workshop
The Blue Dragon Foundation is a charity organization based in Hanoi which focuses on saving women and children from human trafficking. At their children’s centre in the city, they cook large amounts of food for the children every day, which inevitably meant a food waste problem. That’s where we came in.
In partnership with the United Nations International School, we set up a workshop for their staff on how to deal with food waste with the bokashi system in the centre.
We then visited the foundation’s local vegetable garden near the Red River in Hanoi, and helped the local gardener with their composting area and optimised it for turning the food waste from the children’s centre into compost for their vegetable garden. The idea was to grow clean food for the centre, and then use any of the waste from the kitchens to bring back to the field for the next crop, reducing the need for fertilizer inputs.
